
This recipe, believe me, is very tasty!
Don’t be frightened by the fact that this recipe includes homemade pasta. The maltagliati (italian pasta), are really simple to prepare and in case you don’t have time or desire, you can easily replace them with ready-made pasta (short kind).
PASTA WITH CHICKPEAS AND HOMEMADE MALTAGLIATI

Ingredients: 1 red onion – 1 carrot – celery – 1 teblespoon of tomato paste – one can of washed and drained chickpeas – 2 peeled and diced potatoes – 100 g of homemade pasta (maltagliati), or the same amount of ready made pasta (short kind) – salt – chili pepper and rosemary herbs for decorating.
for the homemade pasta (maltagliati): 100 g di flour (00) – 1 egg – a pinch of salt
Sauté a carrot, onion and celery in oil, add the drained and washed chickpeas and two diced peeled potatoes.
Add a spoonful of tomato paste.
When the soup is cooked, pour in a handful of pasta, or the homemade maltagliati by mixing an egg with 100 grams of flour.
Maltagliati preparation:
Pour the flour into a bowl or mixer, add the egg and salt and knead.
Transfer the dough to a floured surface and work until a smooth and homogeneous mixture is obtained; let stand 30 minutes.
Take the dough, dust the surface with flour and roll it out with a rolling pin as thin as possible.
Once laid, cut it into strips of 4-5 cm and arrange them one on top of the other, with the knife or with the cutter cut oblique cuts.
Sprinkle the dough with flour, place it in a tray, cover with a cloth and let it dry for a while before using it for your recipe.
Just before serving, add the spices.
