Today I propose this soup which will also be appreciated in the summer.
Also in this case the preparation is quite simple and it won’t take too many ingredients.
BARLEY SOUP WITH CARROTS AND LEGUMES
Ingredients: 150 g barley – 2 carrots – 1 piece of celery – 2 potatoes – 1 onion – 1 box of legumes or lentils (optional) – ham or bresaola cut into stripes (optional) – 4 tablespoons of extra virgin olive oil – 1 l of broth – chives
Start by dicing the onion, carrots, celery and potatoes into cubes.
Fry an onion in two tablespoons of oil, then add the carrots and celery and let it brown (about 5 minutes)
Add the barley and cover with the broth and cook over low heat for ten minutes.
At this point add the box of legumes or lentils and the diced potatoes.
Once the barley is cooked, add the salt and the strips of bacon or bresaola (dry beef meat).
In reality, in my recipe there are no legumes and nor the meat. I guarantee that the taste is nonetheless very good, but if you want a richer recipe, you are free to add them.
Decorate with the chopped chives, the remaining olive oil and serve.
