Saving at home – Melons stuffed with chicken breast and mozzarella

Summer is finally coming!

How about a fresh and tasty recipe?

The combination between fruit and meat in the summer is always good. This easy and low-cost recipe will only take half an hour of your time.

If you prefer, you can easily replace the chicken with fresh shrimp. In this case you will just have to boil them 5 minutes in abundant salted water before adding the other ingredients


Ingredients four people: 4 small melons – 4 pieces of chicken breast – 300 g of mozzarella – 1 lemon – paprika – olive oil – salt and pepper

Sprinkle the chicken breasts with paprika, cook them in a hot pan for about 5 minutes per side, salt them, pepper them and then cut them into stripes (about one centimeter wide)

Wash the melons carefully and dry them with a kitchen towel, cut them in half and with a spoon remove the seeds and filaments.

Empty them with a spoon being careful not to cut the peel and keep the pulp aside; you will get 4 bowls that you will put in the fridge covered with plastic wrap.

Cut the mozzarella into cubes and mix together with the chicken and the melon in a large bowl.

Grate the lemon zest and put it in a cup, add the lemon juice passed to the strainer, add a little salt and mix well. At last add the olive oil and the pepper. Mix until you obtain an emulsion.

Distribute the ingredients in bowls made from melons, cover with the sauce and serve.

You’re done!
