Saving at home – Potato omelette

EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

What do you think of a potato omelette as a second course or, as an appetizer, if cut into squares?

The potato omelette is very good to eat both hot and cold and is also very easy to prepare.

What is cheaper than the potato omelette? Practically nothing I think, you will use potatoes, eggs and an onion, practically all the least expensive ingredients that exist and that, to be honest, we usually have at home; you can enrich it and personalize it with aromatic herbs that you prefer and it is always delicious. Not sure what to cook for today? You have nothing at home and you don’t feel like shopping? Are you curious about how to prepare the potato omelette?

Let’s start:

POTATO OMELETTE

Ingredients for 4 people: 500 g potatoes – 6 eggs – 70 g Parmesan cheese – 1 onion – 1/2 cup parsley – extra virgin olive oil – aromatic herbs – salt

Preparation:

Put the potatoes (unpeeled and washed very well), in a saucepan and cover them with cold water.

Turn on the heat and boil the potatoes until cooked and soft.

Remove the potatoes from the heat and pass them under cold tap water to cool them. Peel the potatoes and cut them into slices.

Put the eggs in a bowl together with the grated Parmesan, the minced onion and a pinch of salt and beat them with a fork.

Add the finely chopped parsley or other chopped and mixed aromatic herbs. Add the sliced ​​potatoes and mix gently so as not to break them.

Heat a non-stick pan lightly greased with extra virgin olive oil and pour the mixture for the potato omelette. Cook the potato omelette for about 15 minutes over medium heat and covered with the lid, then take a plate larger than the pan and put it on top.

Quickly turn the potato omelette onto the plate and slide it back into the pan. Cook the potato omelette also on the other side for 10 minutes. When the potato omelette is well cooked you can remove it from the pan.

Serve the potato omelette warm or cold.

If you want you can add a spoonful of milk to the mixture for the potato omelette in order to make it softer. You can vary the aromatic herbs at your pleasure. You can bake the potato omelette in a preheated oven ventilated at 180° for 40 minutes in a pan with wet and squeezed absorbing paper.

Serve immediately
