EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
These meat rolls are a second meat dish typical of Apulian cuisine (Southern Italy) and consist of stuffed veal rolls, in some cases wrapped in bacon (which you can substitute with roasted turkey) and caciocavallo cheese (or any other cheese that melts easily).
Once the slice of meat is stuffed, it is rolled up.
They are usually cooked on the grill but, alternatively, they can be cooked in the oven as in our today’s recipe.
Ingredients for 4 people: 12 thin slices of veal – bacon (optional or it can be replaced with bresaola or roasted turkey – caciocavallo cheese (or any other cheese that melts easily) – 2 sprigs of parsley – 1 clove of garlic – extra virgin olive oil – salt and pepper
To prepare this traditional Southern Italian recipe, start by cutting the caciocavallo cheese into thin slices, then take the slices of meat, cover them with parchment paper and beat them to make them very thin.
Add salt, pepper to the slices and start composing the rolls by placing on each slice of meat a slice of bacon (you can replace it with bresaola or roasted turkey), a few slices of caciocavallo cheese (or any other cheese that melts easily) and then flavor with the parsley and the minced garlic.
Roll the slices and stop them with a toothpick. Oil an oven dish that can contain all the rolls and bake in a preheated oven at 200° for about 30 minutes, finish cooking by turning on the grill for a few minutes.
