A light and versatile dish, delicious with both meat and fish main courses.
QUICK BAKED EGGPLANT
Ingredients for 4 people: 2 medium eggplants- 4 spoons of oil – 2 cloves of garlic – dried oregano, parsley, basil, 2 tablespoons of grated pecorino cheese – 4 tablespoons of breadcrumbs – salt and pepper
To prepare the quick baked eggplants, wash them and cut them into slices of about 1 cm.
Then cut into cubes which you will place in a single layer on a baking tray lined with parchment paper.
Season them with oil, salt and pepper. Add breadcrumbs and pecorino cheese, the aromatic herbs, in quantity to taste, the two thinly minced cloves of garlic and mix everything in order to distribute the seasoning equally.
Bake in the preheated oven at 180 °, in fan-assisted mode for 20 minutes, then under the grill for another 4-5 minutes or until lightly browned. Remove the quick aubergines from the oven and serve.
