EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

Today we will go for this recipe in order to be able to enjoy your fresh basil all year round: basil in oil.
You will need just two ingredients are enough to have this herb always at hand.
Let’s start:
BASIL LEAVES IN OIL

Ingredients for 4 people: 300 g fresh basil leaves – extra virgin olive oil (enough to cover the leaves) – dried chili peppers (optional)
Preparation:
For 1 jar of basil leaves in oil weighing about 300 g, first wash and dry 300 g of fresh basil, then remove the larger leaves from the stems, making sure that they are intact and bright green in color.
Place the basil leaves in a well-dried and previously sterilized glass jar and add, if you like the spicy flavor, a few pieces of dried chili pepper (this ingredient is optional), gently pressing everything with the handle of a wooden spoon.
Once the basil pot is filled, pour in extra virgin olive oil until the container is filled, then press the leaves with the back of a wooden spoon and tuck in with other oil so that they are completely submerged.
Cover the basil leaves in oil with a disk of baking paper, close tightly and store in a cool, dark place.
Once the jar is opened, keep the basil leaves in oil in the refrigerator, possibly covering the part of the leaves with other oil: the preserve can be kept for a few weeks more.
