Saving at home – Pumpkin cream

EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

Although this is not really the time to talk about soups, today I propose this pumpkin cream that you can also serve cold.

This cream is super fast, especially if you have frozen some pumpkin during the winter season.

Let’s start:

PUMPKIN CREAM

Ingredients for 4 people: 1 pumpkin – 100 g cooking cream – extra virgin olive oil – salt

Preparation:

If the pumpkin is fresh, cut it into pieces and cook it in the oven with salt and oil.

If, on the other hand, you have already cooked and frozen it previously, just take it out of the freezer a few hours before preparing the cream.

Put the roasted pumpkin (frozen or fresh) in a pan with 500 ml of hot water, boil it, then blend it with a little cooking cream and add the salt.

Finally try to complete with a drizzle of extra virgin olive oil: it is very special.

If you serve it in the summer season, it will be delicious even cold.

  1. Soup gets no respect. At least not the respect it deserves. Soup is good any time, any day, any weather, Constructed with care, it is healthy. Simmering on the stove (or in the microwave) it makes the home smell gloriously. It is the economical “user of all the leftovers” that by themselves would not make a legitimate meal.” A quick trip to the herb garden to grab a pinch of this or a snip of that to sprinkle across the surface when soup is served makes the meal a gastronomic delight and probably, for the added herbal kick, even more healthy! Save the absolute creative genius editions, soup is quick, so the kitchen doesn’t overheat. Winter? Let it simmer – it will make the home feel (and smell) two degrees warmer. Respect soup. Any day. Especially this one. Did you look at the picture? Did you read the ingredients? This “soup” this healthy, economical soup needs to be added to your one-bowl rotation – lunch or supper!

  2. Ah! But you did! You suggested one could provide the main ingredient from the freezer. You clever person. Now, your audience, faced with too much pumpkin at harvest (or in the local farmer’s market) can fill the empty spots in the freezer in anticipation of a snowy December day.
