Saving at home – Pokè Bowl

EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

Hi everyone!

Here we are today with another recipe taken from the international cuisine: Pokè Bowl, the recipe for the delicious and nutritious single dish of Hawaii.

The pokè bowl is based on white rice, raw fish tuna or salmon – marinated, seaweed, avocado and vegetables: a salad served as an appetizer that can easily become a genuine and healthy single dish.

Let’s start:

POKE’ BOWL

Ingredients for 4 people: 320 g sushi rice (or short grain) – 220 g fresh salmon – 2 avocados – 150 g wakame seaweed (you can find it in the ethnic department at the supermarket) – 1 mango – 1 radish – 1 spring onion – soy sauce – sesame seeds

Preparation:

Lets’ start by cleaning and cooking the rice: rinse it repeatedly until the water that comes out is transparent.

Pour it into a high-sided saucepan, add the same amount of water and bring to a boil.

Lower the heat, cover with a lid and cook for about 10/12 minutes without ever stirring. Turn off, let it rest for 5 minutes and separate it gently with a fork.

Cut the salmon into cubes, put it in a bowl, add the soy sauce, sesame seeds and a half finely chopped spring onion, mix and let the marinade rest for 30 minutes. Meanwhile clean and cut the avocado and mango and cut them into strips or cubes. Rinse and dry the seaweed with a sheet of absorbent paper. Cut the radish into thin slices.

At this point you can compose your poké bowl: arrange the rice on the bottom of your bowls, add the other ingredients keeping them separate from each other, season with a drizzle of soy sauce or extra virgin olive oil and serve!

Advice:

What we have proposed today is of course a basic pokè bowl recipe that you can enrich as you like: as an alternative to salmon you can for example use tuna (in this way you will get an Aku poke), as long as it is always fresh; to the avocado you can add peeled and sliced ​​cucumbers, fresh spinach or carrots cut into julienne strips.

a much loved version is the sweet-sour pokè bowl in which fruit is also added: raspberries, for example, are just fine!

The pokè bowl is more a philosophy than a dish: many ingredients together in a balanced and healthy dish; for this reason you can use your imagination by replacing the sushi rice with black rice or why not with cous cous!
