EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
Today we will prepare a great classic of the Italian tradition recipes in which the octopus is the protagonist: the octopus salad is fresh, genuine, light and very easy to prepare.
The trick is to cook in boiling water for no more than 30 minutes: the time it takes for the fish to become soft at the right point without losing its characteristic consistency.
The rest will be done by the lemon juice and a drizzle of extra virgin olive oil: can you think of something simpler?
Ingredients for 4 people: 500 gr of fresh octopus – 100 gr of carrots – 1/2 onion – 4 potatoes
Seasoning: parsley – olive oil – lemon juice – salt and pepper to taste
Clean the octopus in boiling water with the carrots and the onion.
Add salt and cover, let it cook for about 30 minutes.
Meanwhile, peel the potatoes and cook them in boiling water.
Drain the octopus and cut it into pieces.
Cut the potatoes into squares, add the lemon juice, parsley, salt, pepper and olive oil.
Mix all the ingredients well and serve.
