EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
Today we will prepare a very special appetizer, based on fish, orange and fennel: toasted bread with anchovies, fennel and orange slices. It is a recipe with a delicate taste and very easy to prepare.
TOASTED BREAD WITH ORANGE SLICES, ANCHOVIES AND FENNEL
Ingredients for 4 people: 400 g of anchovies – 1 teaspoon of fennel seeds – 1 orange – 1 hot pepper – 1 heart of curly endive – 12 slices of toasted bread – 20 g of wild fennel – white vinegar – extra virgin olive oil – salt
Clean the anchovies, remove the head, the entrails and the central bone, rinse them and lay them out to dry on clean kitchen paper.
Arrange them in a large bowl, pour over vinegar to cover them, add a teaspoon of salt and mix gently.
Cover them with film, put them into the fridge and leave them to marinate for 3-4 hours.
Drain the anchovies from the marinade and dry them again with kitchen paper, transfer them into a large washed and dried jar with the fennel (flowers or crushed seeds) and cover with oil.
Let them rest in a cool place for 3-4 hours. Serve the anchovies on small pieces of toasted bread with the peeled orange and cut into slices, chopped fresh fennel, a few tips of curly salad, strips of spicy peppers without seeds, finally add a little of their oil.
