GRATIN OMELETTE WITH GOAT CHEESE AND OLIVES
Ingredients for 4 people: 5 eggs – 400 g of courgettes – 80 g of grated Grana Padano – 50 g of pitted black olives – 1 goat cheese – 30 cl of milk – 3 tablespoons of parsley – chopped chives and chervil – 1 sprig of thyme – curry – oil – salt – pepper
Preheat the oven grill. Meanwhile, heat two tablespoons of oil in a pan, season the zucchini cut into thin slices and a sprig of thyme for 10 minutes.
Meanwhile, with a fork crush the goat cheese, cut the olives in half. In a bowl, beat the eggs with a pinch of curry, salt and pepper, add the Grana Padano, chopped herbs, olives, and the goat cheese.
Mix everything, if needed, soften it with a little bit of milk. Season the zucchini with salt and pepper, pour in the egg mixture, cook it for 5 minutes so that it only slightly thickens, remove from the heat.
Transfer the omelette to a pan brushed with oil, place the container under the oven grill and, very carefully, brown the surface for about 2 minutes.
Remove and serve at the table in the dish used for baking.
