Saving at home – Florentine style Stew


Hi everyone!

Today’s recipe is a bit more expensive because of the meat, but if you serve it with salad or mashed potatoes, you will have a very nutritious and tasty single dish.

The Florentine stew is a wonderful dish, a comfort food of the Tuscan tradition that will make you discover typically Italian flavors and aromas! The preparation is not difficult but requires patience.

I guarantee that the final result will be spectacular!

Let’s start:


Ingredients for 4 people: 1 kg beef – 500 gr peeled tomatoes – 3 cloves of garlic – 2 carrots – 2 onions – 1 celery stick – 2 sage leaves – 1 sprig of rosemary – 1 glass of red wine (or apple vinegar) – 4 tablespoons of extra virgin olive oil – salt – black pepper


Prepare the seasonings: take the garlic cloves, the sage leaves, the rosemary needles and chop them finely; add a pinch of salt and pepper and mix everything together.

Now, with the use of a sharp knife, make holes in the piece of beef and insert the seasoning, in order to flavor the meat.

Tie the meat to keep its shape even during cooking.

Take a terracotta pot, heat a the olive oil and insert the piece of meat and brown it on all sides.

Meanwhile, prepare the vegetables that will be used for cooking the stew: take the carrots, peel and coarsely cut them, do the same with the onions and celery.

Add the vegetables in the pot.

Blend everything with a glass of red wine (or apple vinegar) and cook over high heat so that the alcoholic part evaporates.

At this point, add the peeled tomatoes, mix well and cook in a covered pot at low heat for at least 4 hours and if necessary add water.

Serve the stew very hot accompanied by its sauce.
