LENTILS WITH MINT SALAD
Ingredients for 4 people: 190 g feta cheese – 100 g small lentils – 100 g mixed salad – 100 g carrots – fresh mint – balsamic (or apple) vinegar – extra virgin olive oil – salt
Boil the lentils in unsalted boiling water for 10 minutes;
turn off the heat and let them rest for 5 minutes, then drain.
Peel the carrots, then cut them in half and then at last into thin strips.
Dice the feta cheese.
Collect the lentils, mixed salad, carrot strips and feta in a salad bowl; perfume everything with a sprig of chopped mint leaves and seasoned with balsamic (or apple) vinegar, salt and extra virgin olive oil.
