Saving at home – Lentils with mint salad

Hi everyone!

Here we are with another recipe that is quick and delicious at the same time.

If you want a good and healthy recipe, these lentils with mint salad are for you.

Let’s start:

LENTILS WITH MINT SALAD

Ingredients for 4 people: 190 g feta cheese – 100 g small lentils – 100 g mixed salad – 100 g carrots – fresh mint – balsamic (or apple) vinegar – extra virgin olive oil – salt

Preparation:

Boil the lentils in unsalted boiling water for 10 minutes;

turn off the heat and let them rest for 5 minutes, then drain.

Peel the carrots, then cut them in half and then at last into thin strips.

Dice the feta cheese.

Collect the lentils, mixed salad, carrot strips and feta in a salad bowl; perfume everything with a sprig of chopped mint leaves and seasoned with balsamic (or apple) vinegar, salt and extra virgin olive oil.
