Tired of the usual turkey recipes?
How about cooking turkey a little differently?
Well, then here’s another simple dish but with a delicate and original taste: turkey bites with raisins and pine nuts.
TURKEY BITES WITH RAISINS AND PINE NUTS
Ingredients for 4 people: 700 g Turkey breast – 250 g Zucchini – 60 g Raisins – 40 g Pine nuts – Fresh thyme – White wine – Flour – Extra virgin olive oil – Salt – Pepper
Peel the courgettes and cut them into cubes.
Cut the turkey breast into small bites, season with a pinch of pepper and flour them.
Heat a pan with a thin layer of oil, then brown the turkey; after a couple of minutes, add the pine nuts, raisins, thyme leaves and courgettes.
Add a glass of white wine (OR APPLE VINEGAR) and season with salt and pepper; finally cover with the lid and continue cooking over low heat for about ten minutes. Serve by completing with fresh thyme leaves to taste.
