Saving at home – Pumpkin pancakes


Hi everyone!

Pumpkin fritters are a delicious recipe that will appeal to even the younger ones.

They are very quick to prepare and once the batter is made you can immediately fry your pancakes.

If you also have some courgette flowers, you can cut them into small pieces and add them to the dough.

In no time you will have these fragrant fritters.

Let’s start:


Ingredients for 4 people: 350 g pumpkin – 150 g flour – 2 eggs – 50 ml of water – 30 g grated pecorino – 5 g instant yeast for savory pies – oil for frying – salt and pepper


Cut the pumpkin into cubes.

Steam it for 15-20 minutes or place it in the microwave with a cup of water at 800 watts for about 7 minutes.

The pumpkin will have to soften, if necessary, increase the cooking time by a few minutes.

Mash it with a fork. In a bowl, put the eggs, a little salt and the water.

Knead and add sifted flour and powder yeast. Add the pumpkin, pecorino and pepper.

Heat abundant seed oil and form your pancakes with the help of a spoon. Cook over medium heat for 2-3 minutes on the side.

Dry the excess oil and serve.

      1. I’m sure you found you were absulutely correct. In the UK, we had turnips, both to eat and at halloween (turnip lanterns). There was also something similar known as swede. To eat, we would maybe cut them into cubes and boil with carrot. We would eat them mashed together, as a vegetable, and call it carrot & turnip. Nowadays, here, one seems only to be able to buy pumpkin instead.
