EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
I previously posted a couscous recipe.
Today, however, we will see how to prepare a more versatile, faster version and that can be prepared in advance.
This version is topped with zucchini, peppers and feta cheese.
You can serve it both hot and cold, since we are entering the winter season, perhaps it is more pleasant to eat it warm.
COUS COUS WITH ZUCCHINI, PEPERONI AND FETA
Ingredients for 4 people: 120 g cous cous – 250 g zucchini – 250 g peppers – 100 g feta – 1/2 onion – extra virgin olive oil – salt – basil
Cut the courgettes and the peppers into cubes.
Brown the onion in a little oil and add the vegetables.
Cook for 5 minutes over high heat, stirring often. Then lower the heat, cover with a lid and cook for 10-15 minutes (or until the vegetables have softened.
Prepare the couscous: boil 150ml of water with a little salt and oil and add the couscous.
Cover, let rest for 5 minutes and separate with a fork.
Mix the vegetables with the cous cous, the feta cheese and a little basil.
Serve both hot and cold.
