No one can ever imagine that to prepare it you just had to cook the pasta and blend the raw ingredients to obtain the tasty and colorful radicchio-based seasoning.
PASTA WITH RADICCHIO PESTO AND WALNUTS
Ingredients for 4 people: 500 g spaghetti – 2 strains radicchio – 100 g grated Parmesan cheese – 50 g walnuts – 1 lemon – extra virgin olive oil – salt – pepper
Cut the radicchio and soak it in cold water for about 20 minutes so that it loses its bitterness.
Join the cut radicchio, nuts and lemon juice in the blender. Blend and adjust salt and pepper.
Pour the radicchio pesto into a bowl and add the parmesan and oil to taste. Cook the pasta al dente, season it with pesto and serve with parmesan, pepper and chopped walnuts.
