The rice with red beans and lime is a complete and light first course, ideal when you are short on time or want something that does not commit too much energy.
For this dish you can use canned beans, but remember to drain and rinse them well before using them.
Let’s start:
RICE WITH RED BEANS AND LIME

Ingredients for 4 people: 180 g Arborio or Parboiled rice – 290 g boiled red beans – half white onion – 1 lime wedges – olive oil – salt
Preparation:
To prepare rice and red lime beans, start by boiling 180 g of Arborio or Parboiled rice in a pot filled with lightly salted boiling water for the time indicated on the package.
Meanwhile, heat a drizzle of olive oil in a pan over a brisk heat and as soon as it is hot brown half a white onion until it is well softened.
For preparations that need gentle cooking as in this case, it is better to utilize a non-stick pan with a very thick bottom, in this way the heat is distributed more evenly.
At this point add the beans in the pan and let them cook for a few minutes, stirring them gently. At the end of cooking adjust salt.
When the rice is cooked, drain it, put it in a bowl, add the beans and mix everything well, after which serve your rice accompanying it with sliced lime.
