Saving at home – Pistachio fettuccine


Hi everyone!

Pistachio fettuccine are a very particular and refined first course, ideal also for a romantic dinner!

Let’s start:


Ingredients for 4 people: 1 jar of pistachio pesto – 350 g fettuccine – 2 tablespoons ricotta – 100 g smoked bacon (or turkey) – salt


If you do not have a ready pistachio pesto, you can make it by beating or blending 200 g of shelled pistachios and deprived of skin along with a tablespoon of oil, a pinch of salt, a grind of pepper and a small handful of grated Parmigiano Reggiano (Parmesan cheese).

First cook the pasta in a pot with plenty of salted boiling water.

Meanwhile, brown the bacon (or turkey) in a pan, without seasoning or oil.
As soon as the bacon (or turkey) is browned, add the pistachio pesto and a couple of tablespoons of water to mix everything up and lower the heat to a minimum.

Now add two tablespoons of ricotta and mix well until you get a creamy sauce, then turn off the heat.

As soon as the pasta is cooked, drain it and sauté it in the pan together with the pistachios and bacon (or turkey).

If it turns out to be too dry, you can stretch the sauce with a couple of tablespoons of water.
