Saving at home – Tirami su

Tirami su is a dessert that Italian grandmothers used to prepare for a breakfast that today we could define as poor, but which at the time was really rich! The Italian dessert by excellence, the most famous and loved one, but above all that has given life to many other versions, such as tiramisu without eggs!

Among the different variations there is strawberry tiramisu and Nutella tiramisu.

Let’s start:


Ingredients for 4 people: 300 Savoiardi (long biscuits) – Very fresh eggs (about 4 medium) – 220 g Mascarpone – 100 g Sugar – 300 g coffee (sweetened to taste) – Bitter cocoa powder for the surface to taste.


To prepare the tiramisu, lets start with the eggs (very fresh): carefully separate the egg whites from the yolks, remembering that to whip the egg whites well they must not have any trace of yolk. Then whip the egg yolks with an electric whisk, pouring only half a dose of sugar.

As soon as the mixture has become light and fluffy and with the whisks still running, you can add the mascarpone, little by little.

Once all the cheese has been incorporated, you will have obtained a thick and compact cream; keep it aside. Clean the whisks very well and beat the egg whites, pouring the remaining sugar a little at a time. You will have to mount them when until very firm; you will get this result when turning the bowl over and the mass will not move. Take a spoonful of egg whites and pour it into the bowl with the egg yolks and sugar and mix vigorously with a spatula, so you will dilute the mixture.

Then proceed to add the remaining part of egg whites, little by little, mixing very gently from the bottom up. Once ready, distribute a generous spoonful of cream on the bottom of a 30x20cm baking dish and distribute well.

Then soak the biscuits for a few moments in cold coffee already sweetened to your liking (about1 teaspoon of sugar should be enough) first on one side and then on the other.

Gradually distribute the soaked biscuits on the cream, all in one direction, so as to obtain a first layer on which you will distribute a part of the mascarpone cream. Also in this case you will have to level it carefully so as to have a smooth surface and continue to distribute the ladyfingers soaked in coffee, then make another layer of cream.

Level the surface and sprinkle it with unsweetened cocoa powder and leave to harden in the refrigerator for a couple of hours.

Your tiramisu is ready!
