The spinach Genoa style is a delicious recipe that is very easy to prepare.
The lightly seared spinach is seasoned in a pan with anchovies, raisins and pine nuts: sweetness and flavor blend, while the pine nuts give the dish a “bite”.
Very simple and fast, it is a side dish to be enjoyed hot or warm, together with a second course of meat or roasted fish.
SPINACH GENOA STYLE
Ingredients for 4 people: 1 kg of spinach – 50 g of raisins – 50 g of pine nuts – 4 salted anchovies – 1 tablespoon of chopped parsley extra virgin olive oil – salt – pepper
To prepare the spinach Genoa style, begin to soak the raisins in a bowl of lukewarm water, leaving them there for about a quarter of an hour.
Arrange the spinach in a pan and boil without adding water. Once cooked, drain them very well. In a pan, heat four tablespoons of oil, add the desalted anchovies, boned and coarsely chopped, stir and after a couple of minutes add the spinach.
Sprinkle them with chopped fresh parsley and mix. Add the well-squeezed raisins, season with salt and pepper and leave to flavor over low heat for about ten minutes.
Transfer the spinach Genoa style to a serving dish and serve hot.
