Saving at home – Mini dessert with cream and raspberries


Hi everyone!

These mini desserts with cream and raspberries are delicious and delicate single portions, ideal for an after dinner.

The recipe is very simple and is prepared in a short time. It takes 25 minutes and they are immediately ready to serve. Virtually perfect!

Let’s start:


Ingredients for 4 people: 250 ml of whole milk – the zest of 1 untreated lemon – 2 egg yolks – 50 g of granulated sugar – 30 g of corn starch – 150 ml of whipped cream – 40 g of icing sugar
TO DECORATE: raspberries – fresh mint leaves – powdered sugar


To prepare the cream and raspberry mini desserts, bring the milk to the limit of boiling along with the finely grated lemon zest.

Meanwhile, in a separate saucepan, beat the egg yolks with the sugar using a pair of electric whisk. Add the sifted corn starch to the whipped eggs, all in one go, and mix perfectly.

Pour the hot milk over the mixture, slowly, stirring constantly. Place on the heat and let the cream thicken, stirring often, until it comes to a boil. At this point remove it from the heat, transfer it to a glass bowl, cover with the food film in contact and let it cool.

Whip the cream, very cold from the refrigerator, in a container with the help of an electric mixer and, when it starts to become consistent, add the sifted icing sugar. Continue to whip until the final consistency and then add it to the custard which has reached room temperature. Take care to carry out this operation very gently and in several stages, mixing with a spatula from bottom to top. Transfer the diplomatic cream thus obtained into single-portion small glasses, garnish with raspberries, mint and sprinkle with powdered sugar to taste. You can serve the cream and raspberry mini desserts immediately or store them in the refrigerator until consumption.
