Saving at home – Salmon and leek quiche

The salmon and leek quiche is easy and quick to prepare, affordable for everyone and ideal as an appetizer, main course and quick lunch. A shortcrust pastry shell encloses a delicious filling given by the perfect match between the sweetness of leeks and the flavor of smoked salmon. Try it now.

Let’s start:


Ingredients for 4 people: a roll of shortcrust pastry – 1 leek – 3 eggs – 2 dl of milk – 100 g of smoked salmon – nutmeg – extra virgin olive oil – salt – black pepper


To make the salmon and leek quiche, start peeling the leek by cutting the thickest end and slicing the rest into thin slices. Heat a couple of tablespoons of oil in a pan and allow the leek slices to flavor for about ten minutes. At the end, add salt and pepper.

Meanwhile, shell the eggs in a bowl and beat them with a fork together with the milk: add a grating of nutmeg, a pinch of salt and a sprinkle of pepper. Line a pan 18 centimeters in diameter with the shortcrust pastry, letting the dough come out along the edges, and distribute the sliced ​​leek over it. Arrange the salmon cut into strips and pour over all of the egg mixture.

Fold the excess dough inwards to form a frame and transfer to a preheated oven at 180°.

Cook the quiche for about 25 minutes, take it out of the oven and let it settle for about ten minutes before turning it out. Arrange the salmon and leek quiche on a serving dish and serve sliced ​​and accompanied by a mixed salad.
