A recipe ready in 40 minutes where you can decide to replace raw ham with speck, bresaola or turkey, for example. A delicious dish for those who love white meat.
CHICKEN BREAST IN A PAN
Ingredients for 4 people: 400 gr of chicken breast – 100 gr of raw ham (you can replace it with sliced turkey or bresaola) – 40 gr of butter – 1 clove of garlic – 1 glass of marsala (or apple vinegar) – 1 sprig of sage salt – black pepper
First, to prepare the chicken breast in a pan, clean it well, remove the central bone and the cartilage between the two parts, divide the breast in two.
Spread a few slices of raw ham (bresaola or turkey)on the cutting board, place a part of the chicken breast on top and wrap it with the slices of ham (or sliced bresaola or turkey), one by one, so that they remain well attached to the chicken.
Repeat the operation with the other half of the chest.
In a pan, brown a clove of garlic with butter and sage.
Add the chicken breasts wrapped in ham (or bresaola/turkey) turning them when they are golden brown on one side. Salt, pepper and add the Marsala (or apple cider vinegar), taking care to let it evaporate over high heat.
Now cover with a lid and cook for 25-30 minutes.
