EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
Cherry tomatoes with crispy bread are a very easy and quick side dish to prepare.
A combination, that of bread and tomato, which presented in this version will be loved by all!
CHERRY TOMATOES WITH CRISPY BREAD
Ingredients for 4 people: 500 g of cherry tomatoes – 3 slices of bread – 1/2 clove of garlic – 1 sprig of fresh parsley – 1 tablespoon of desalted capers – 1 anchovy fillet – extra virgin olive oil – salt and pepper
To prepare the cherry tomatoes with crispy bread, start finely chopping, with a knife, the parsley together with the garlic and capers.
Collect the prepared mixture in a bowl and add a few tablespoons of oil, a pinch of salt and a grind of pepper. Mix well.
Cut the bread into small cubes. In a pan heat 2 tablespoons of olive oil and let the anchovy fillet melt. Add the bread cut into cubes and brown them until lightly colored. In the meantime, peel the tomatoes, cut them in half and transfer them to the bowl with the chopped parsley. Mix everything.
Add the diced bread to the bowl and mix gently. Serve the cherry tomatoes with crispy bread immediately.
