These turkey burgers with a cheddar heart are an easy-to-make second meat dish.

LIME MARINATED TURKEY WITH CHEDDAR HEART
Ingredients for 4 people: 1 kg of whole turkey breast (or, if you prefer, already chopped) – 4 slices of cheddar cheese – 4 spring onions – 2 chillies – 2 limes – fresh thyme – 1 clove of garlic – 1 tablespoon of corn starch – acacia honey – sour cream – extra virgin olive oil salt and pepper
To prepare these lime-marinated turkey burgers with a cheddar heart, start by chopping the meat with a knife until you have cubes that are not too small.
Collect it in a bowl and season with the juice and zest of a lime, a sprinkle of pepper, thyme leaves, a bit of oil, salt and the peeled garlic clove. Stir, cover with plastic wrap and marinate for 10 minutes.
Then remove the garlic, add the starch and mix. Using a 10 cm diameter pastry ring and some sheets of baking paper, distribute a layer of meat in the circle and compact it with the back of a spoon, taking care to form a central depression that you will fill with a slice of cheddar folded on itself.
Cover with more marinated meat and compact again to form a hamburger of about 250 g of meat.
Continue in the same way for the other three burgers. Clean and slice the spring onions. Fry them in a pan with a little oil together with the chopped peppers.
When the vegetables are well browned, add a generous spoonful of honey and caramelize.
Transfer the burgers (with the help of the baking paper base) to the hot grill with a drizzle of oil.
Cook each on both sides, turning it gently halfway through cooking with a spatula.
Serve each turkey burger piping hot along with a tablespoon of spring onions and a tablespoon of sour cream.
