EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
Do you have few ingredients at home but want to prepare something really good? Then you have to try making pasta with potatoes, a recipe from the southern Italian tradition.
The original recipe calls for the addition of bacon at the end of cooking, but for a more delicate taste you can easily replace it with diced chicken or turkey.
PASTA AND POTATOES
Ingredients for 4 people: 320 g of mixed pasta – 500 g of potatoes – 100 g of cherry tomatoes – 1 onion – 1 stick of celery – 1 carrot – 60 g of diced bacon (you can replace it with chicken or turkey) – 5 tablespoons of extra virgin olive oil olive – 1 parmesan crust – black pepper – 100 g of smoked provola or scamorza cheese (optional)
To make the pasta and potatoes, start chopping the celery, carrot and onion and sauté them in a saucepan with diced bacon (which can be replaced by chicken or turkey) and oil.
When the vegetables are browned, add the tomatoes cut into wedges and let them dry. Add the peeled and diced potatoes, salt, pepper and a couple of glasses of water.
Bring to a boil and add the parmesan crust (if you really don’t have it, use some grated parmesan).
Continue cooking for 25-30 minutes. After this time, add the pasta and, if necessary, another ladle of water. Cook the pasta, stirring often over medium heat for the time indicated on the package: you will notice that the cooking juices will gradually become creamy.
If you like it, but it is optional, when the pasta is almost cooked, you can add the diced provola.
Stir, transfer to serving dishes and serve the pasta and potatoes steaming hot.
