Saving at home – Mayonnaise


Hi everyone!

Today we will see how to make homemade mayonnaise. It sounds difficult, but in reality you just need to be very careful in mixing the ingredients.

The homemade mayonnaise, believe me, it’s completely different! I recommend using fresh eggs.

Let’s start:


Ingredients for 4 people: 2 egg yolks – 1 lemon – 250 g of extra virgin olive oil – salt and pepper


Put the egg yolks in a cup, add salt and start mixing them with a wooden spoon.

As soon as you see the eggs take on consistency, pour the oil drop by drop. When the mayonnaise is well whipped, add a tablespoon of lemon juice, a little at a time.

If you use the blender, put the two egg yolks, one egg white, one tablespoon of lemon juice and three or four tablespoons of oil in the mixer.

Start the blender on the first speed and at the same time begin to pour the oil through the existing hole in the lid of the glass, making it go down with a thin stream. Turn the blender until the mayonnaise is thick enough.

The desired density is obtained by dosing the quantity of oil: however, if it is still too soft for your tastes, you can make it more consistent by adding half a cooked potato and running the blender. in the opposite case, that is of too thick mayonnaise, you can dilute it by adding (very slowly) one or two tablespoons of cold broth by turning on the second speed for a few moments.

If you decide to put your mayonnaise in a glass jar, remember to always sterilize both the jar and the lid.
