Saving at home – Strawberry cream cake


Hi everyone!

Today we will see how to make an impressive dessert: the strawberry cream cake.

The combination of strawberries and cream will be appreciated by all.

This recipe is also pretty easy to prepare. I suggested, for a matter of time, the shortcrust pastry purchased ready, but if you have time and you want to prepare it yourself, you should try to make it at home.

Let’s start:


Ingredients for 4 people: 1 package of frozen shortcrust pastry – 750 g strawberries – 4 tablespoons of apricot jelly (or apricot jam, in this case you will have to reduce by half the quantity of apricot brandy or apricot juice) – 4 tablespoons of apricot brandy (which you can easily replace with apricot juice) – flour. For the cream: 2 egg yolks – 80 g of sugar – 30 g of flour – 1/4 l of milk – 1 lemon zest – 20 g of butter for the mold


Defrost the shortcrust pastry, then roll it out on a floured pastry board; line it in a greased cake pan with a detachable edge: fold the edge of the dough inside, creating a cord all around that you will pinch with your fingers; prick the pasta with a fork to prevent it from swelling during cooking; then bake at 200 degrees for 25 minutes.

Meanwhile, prepare the cream: place the two egg yolks in an saucepan: whip them with the sugar, add the flour and hot milk and the lemon zest; Cook and stir continuously until the cream starts to boil; remove it from the heat and let it cool, after removing the lemon zest.

Remove the pan from the oven, unhook the edge on the serving dish and let it cool.

Put the apricot jelly in a saucepan (you can also use the apricot jam as an alternative, in this case you will have to reduce the brandy or juice by half) and dilute it with the apricot Brandy (or apricot juice).

Cook for a short time, then remove from the heat and let the mixture cool down a little; in the meantime, wash the strawberries and remove the stalk, leaving them whole.

Cover the dough base with the prepared cream, place the strawberries on top of which you will slowly pour the apricot syrup to make them more shiny and decorative.

If you want you can finish with a sprinkle of icing sugar.
