SHORT PASTRY WITHOUT BUTTER
Ingredients for 4 people: 320-330 g of flour 00 – 100 g of granulated sugar – 100 ml of sunflower oil – 2 eggs – 1 yolk the zest of 1/2 lemon (or 1/2 vanilla bean) – 8 g of baking powder (1/2 sachet) a pinch of salt
To prepare the short pastry without butter, mix the sugar with the eggs, the yolk and the grated lemon zest in a bowl.
Add the oil, the sifted flour with baking powder, a pinch of salt and mix with a fork.
Transfer to a floured pastry board and knead quickly until the mixture is soft and homogeneous.
Form a loaf, wrap the short pastry without butter in cling film and let it rest for 1 hour in the refrigerator before using it for your recipes.
