EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
Here we are at our last appointment with the recipes for making shortcrust pastry at home.
Today version is salted.
This dough, also called quiche pasta, is an excellent base for preparing savory pies, tartlets and other savory delicacies.
Below we will see the procedure by hand, but it can also be done with a common mixer with metal blades or with the planetary mixer (using the leaf hook and at low speed).
Ingredients for 4 people: 200 g of flour 00 – 5 g of salt – 90 g of butter and small pieces – 1 egg – 20 g of water
Work the soft butter in a bowl with the flour and salt with your fingertips until it is completely incorporated by the flour.
Combine the egg and water, a little at a time, and continue to knead until you get a homogeneous mixture.
Wrap in cling film and let it rest in the fridge for 1 hour, better 2.
Bring the dough back to room temperature and roll it out with a rolling pin on a floured pastry board, bringing it to the desired thickness.
Use it as indicated in the recipe that you have chosen.
