EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

The spaghetti omelette, also called generically pasta omelette, is a delicacy of Neapolitan cuisine, usually created with leftovers: pasta with the sauce of the night before, a bit of cheese, what is found in the refrigerator and a hint of fantasy.
An easy and irresistible recipe.
Let’s start:
SPAGHETTI OMELETTE

Ingredients for 4 people: 300 g of spaghetti – 5 eggs – 100 g scamorza or caciocavallo – 100 g smoked stretched bacon (or sliced turkey) – 70 g grated Parmesan cheese – 4-5 tablespoons of milk – extra virgin olive oil – black pepper – salt
Preparation:
To make the spaghetti omelette, begin to dice the stretched smoked bacon (or sliced turkey), then, in a large bowl, beat the eggs with salt and pepper.
Add grated Parmesan cheese and milk. Meanwhile cook the spaghetti and leave them al dente (not completely cooked), as they will complete the cooking in the pan.
When the spaghetti are cooked and well drained, pour into the egg mixture.
Add the diced scamorza and bacon (or turkey) and stir.
Place everything in a frying pan with a drizzle of extra virgin olive oil, trying to distribute the mixture evenly.
Cook for 10-15 minutes over a low heat and with lid. Then, turn the omelette with the help of a lid and complete the cooking.
Serve spaghetti omelette very warm.

Oh my! this looks delightful. Only problem is having leftover spaghetti. I guess next time, it will have to be a double batch!
