Today we will see how to prepare in a short time a super appetizing side dish!
Excellent to serve with meat and fish main courses, these fast baked eggplants are ready in just over half an hour.
Ingredients for 4 people: 2 medium eggplants – 4 tablespoons Oil – 2 cloves Garlic – Dry Oregano – Parsley – Basil – Salt – Pepper – 2 tablespoons grated pecorino – 3-4 tablespoons breadcrumbs
To prepare the baked eggplant, wash, and cut into slices of about 1 cm. Then cut into cubes that you will have, in a single layer, on a baking sheet lined with baking paper.
Season with olive oil, salt and pepper. Add breadcrumbs and percorino, aromatic herbs in quantity to taste and mix everything in order to share the seasoning equally.
Cook in the oven at 180 º, in ventilated mode for 20 minutes, then under the grill for another 4-5 minutes or until lightly browned.
Once the eggplants are ready, serve.
