EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
This is a quick and easy recipe: the cauliflower salad, in fact, is ready in less than half an hour and is prepared with a few simple ingredients: cauliflower, tuna and an anchovy vinaigrette.
The result is a delicious salad that can be served as a main course or, lukewarm, as a delicious appetizer.
Ingredients for 4 people: 1 medium-sized cauliflower – 150 g – tuna in oil – 6 anchovy fillets – 1/2 clove of garlic – lemon juice – extra virgin olive oil – salt
To prepare the cauliflower salad, begin to peel it and reduce it into florets that are to be steamed. Salt them lightly and leave them rather crisp. When they are ready, collect them in a large salad bowl.
Meanwhile, combine in a small bowl the lemon juice, oil and chopped garlic. Add the anchovy fillets and mix well with a fork so that they “dissolve” and mix perfectly the emulsion.
Drain the tuna from the oil and chop it coarsely on the warm cauliflower.
Season with the prepared emulsion, stir well with delicacy and serve the cauliflower salad warm or cold.
