Saving at home – Radicchio (red chickory) and scamorza in a pan with balsamic vinegar

EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

Hi everyone!

I don’t know why I waited so long to post this recipe, since it is one of my favorites.

With a few ingredients, radicchio (red chickory), scamorza (you can also use other cheeses that melt but the scamorza gives it a special touch), balsamic vinegar and very little time you will get this plate that you can serve as an appetizer or second vegetarian course.

Let’s start:

RADICCHIO (RED CHICKORY) AND SCAMORZA IN A PAN WITH BALSAMIC VINEGAR

Ingredients for 4 people: 2 heads of radicchio (red chickory) – 2 scamorze (smoked mozzarella cheese – extra virgin olive oil – balsamic vinegar – salt

Preparation:

To prepare the radicchio and scamorza in a pan with balsamic vinegar clean the salad heads, wash and dry well. Divide each head into 2 for the long, taking care to leave the base intact, so as to obtain 4 halves. 

Cut also the two scamorza cheeses in order to obtain 8 slices.

Pour a little olive oil in a frying pan and blanch the radicchio for a few minutes, lightly salting at the end of cooking. 

Arrange the slices of scamorza in another pan and cook for about 5 minutes on both sides, until the cheese is covered with a browned crust and very soft inside but not completely melted.

Transfer everything on a serving plate and complete with a few drops of balsamic vinegar.

Serve immediately the radicchio and scamorza in a pan with hot balsamic vinegar.
