Then you must try to making grilled pineapple with ice cream and amaretti.
Amaretti are typical Italian biscuits. They are very tasty, but if you can’t find them you can replace them with crumbled digestive cookies.
This quick recipe must be prepared at the moment, but you can cut the pineapple in advance and keep the slices in the fridge until you grill them, this will also be perfect for caramelizing the sugar without sticking.
GRILLED PINEAPPLE WITH ICE CREAM AND AMARETTI
Ingredients for 4 people: 1 fresh pineapple – 300 g cream ice cream – 10 amaretti – whipped cream (sweetened to taste) – brown sugar – butter – cinnamon – dark rum – fresh mint
To prepare the grilled pineapple with ice cream and macaroons, clean the pineapple with the appropriate tool in order to obtain slices all approximately of the same size, pierced in the center.
Heat the grill: when it is hot, grill the pineapple slices, for about 3 minutes per side or until they get colored.
Place a few butter flakes on each slice and sprinkle with a little brown sugar. With the help of a spatula flip and caramelize on very high heat. Then add a tablespoon of rum (you can also replace it with orange juice).
Sprinkle the second side with sugar and turn the slices for one last time.
Place one or two slices of pineapple, each in the middle of four single plates. Place a scoop of ice cream at the center. Sprinkle with the roughly crumbled macaroons. Finish with a tuft of cream on which you will dust the cinnamon. Finally add the fresh mint leaves to decorate.
Serve the pineapple immediately.
