TASTY ORECCHIETTE WITH TURNIP GREENS
Ingredients for 4 people: 500 g orecchiette – 500 g turnip tops – 3 dried tomatoes – 2 cloves of garlic – 4/5 anchovies – 1 slice of homemade bread – chili powder – salt
Clean and wash the turnip greens well, removing the leaves and the hardest stems.
Boil in abundant salted water for a few minutes.
Remove from the heat and set aside.
Cook the orecchiette in the same water.
Meanwhile, in a pan, sauté the garlic, chili and dried tomatoes cut into squares.
Add the anchovies and let them dissolve with a spoonful of the cooking water of the pasta. Pour, then, the turnips and orecchiette. If necessary, add a little olive oil and a few tablespoons of cooking water.
You can give a crisp note by dusting with crumbled bread, previously flavored in a pan with a drizzle of oil.
