MINI PIZZAS READY IN LESS THAN 30 MINUTES
Ingredients for 4 people: 1 jar of Greek yogurt 170 g – 1 jar of flour type 00 – 3 g of instant yeast for savory pies – ½ teaspoon of salt – 250 g of tomato puree – 1 courgette – 200 g of stracchino (or other soft cheese) – 150 g of mozzarella cheese – 100 g bacon sticks (or turkey) – extra virgin olive oil – oregano
First, collect the flour, baking powder and salt in a bowl. Add the yogurt and knead quickly: the result will be a more or less homogeneous dough. Roll it out with a rolling pin on a floured work surface until you get a sheet of dough about ½ cm thick. Using a 6-8 cm diameter plate cut into disks and place them gradually on a baking tray lined with baking paper.
Set aside while preparing the ingredients for the filling: pour the tomato sauce into a dish and season with salt and oil; cut the zucchini into thin rounds and roughly chop the mozzarella. Season each pizza with tomato sauce and oregano and garnish four of them with stracchino and zucchini, four with mozzarella and speck (or turkey) and the remaining four leave them like this. Go over them all with a pinch of oregano and complete with a drizzle of raw oil.
Bake the pizzas in a preheated static oven at 200 º C for about 15 minutes, monitoring the level of browning.
