EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

You’re thinking about the usual veal scallop recipe? This mustard version, is not only an easy and affordable recipe for everyone but also delicious. The combination with mustard makes it very original.
In fact, very few and simple steps are needed to obtain a second meat dish ideal for an appetizing family dinner. For the creamy sauce we have chosen a French sweet mustard, if you prefer a stronger and spicier flavor opt for an English “Mustard”.

Ingredients for 4 people: 4 slices of veal – flour – 2 tablespoons extra virgin olive oil – 40 g butter – one tablespoon of sweet mustard – 1 sprig of parsley – 2-3 sprigs of thyme – a few trickles of chives – salt
Preparation:
To make the veal scallops with mustard begin by lightly flouring the meat slices. Heat butter and oil in a large pan and place the slices. Cook them over medium heat for 8-10 minutes, turning them halfway through cooking: the meat must brown on both sides but remain soft. Finally, adjust the salt. Transfer the scallops on a serving plate and keep them warm.
Dilute the cooking sauce with a few tablespoons of hot water or broth, add mustard and stir well to melt completely in the sauce.
Add to the mixture a chopped mixture of parsley, thyme and chives and cook over low heat for a few minutes. Sprinkle the meat slices with the hot sauce, decorate with some thyme leaves and serve immediately the veal cutlets with mustard.

How, madame, does one “trickle” a chive? This already smells delightful. No veal on hand, and me in charge of supper tonight, I believe I will use pork tenderloin medallions. The Boss is in for a treat.

As you did not tutor on how to “trickle” chives, I improvised. As to using pork medallions, it was a sparkling recipe, but I suspect veal would have retained more natural moisture. Nonetheless, very tasty. Grazie mille!
