Saving at home – Ricotta pancakes

EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

Hi everyone!

Here we are with another recipe: fast and delicious, suitable for all seasons!

In a few minutes your kitchen will host the ricotta pancakes, preparations of salty gastronomy particularly good to be consumed as an appetizer or as a side dish.

Let’s start:

RICOTTA PANCAKES

Ingredients for 4 people: 500g Ricotta – 3 eggs – 120g of flour – 1 glass of Marsala (or apple vinegar) – nutmeg – breadcrumbs. – olive oil for frying

Preparation:

First, put the Ricotta into a large bowl and knead it together with the flour, 2 eggs, a little glass of Marsala (or apple vinegar) and a pinch of nutmeg.

Continue working until you get a nice firm mixture.

At this point, cut some meatballs and crush them on the poles, pass them in the egg previously beaten and finally in the breadcrumbs.

Then fry your ricotta pancakes in hot olive oil (170 or so C), drain and lay them on paper towels to remove excess oil. Serve them with your favourite dish or enjoy them cold in a picnic or in a delicious buffet!
