Saving at home – Eggplant rolls

EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

Eggplant rolls are a very tasty dish typical of Italian cuisine.

Making them at home is really simple: just choose the right ingredients and follow the indications in this recipe.

Let’s start:

EGGPLANT ROLLS

Ingredients for 4 people: 3 eggplants – 100 grams of breadcrumbs – 10 fillets of anchovy – 150 grams of grated white provola – 1 egg – 8 tablespoons of oil – 500 grams of peeled tomatoes – grated parmesan

Preparation:

Wash and cut the ends of the eggplant. Cut into slices along the length and grill.

Dissolve the anchovy fillets in 4 tablespoons of oil and add the breadcrumbsToast.

In a separate bowl, add the grated provola cheese, the egg and the toasted breadcrumbs in oil with anchovies. Mix well and stuff the slices of grilled eggplant. Roll them.

In a pan fry a clove of garlic with 4 tablespoons of oil, add the tomatoes and cook for 10-15 minutes.

Add the rolls and cook for about 20 minutes covering the pan with the lid.

Sprinkle with grated Parmesan cheese and serve the eggplant rolls.
