Saving at home – Coffee ricotta mousse


Hi everyone!

Today we will go for an original, amazing and, as always easy to make dessert!

A mousse that is a tasty alternative to the classic chocolate version and perfect to be enjoyed all year round and that can be prepared for any occasion.

Let’s start:


Ingredients for 4 people: 1/2 sachet vanilla or vanillin – 1dl whole milk – 70 g sugar – 150 g ricotta – 4 g gelatin in sheets (or agar agar) – 20 g bitter cocoa – 1 yolk – 2 egg whites – milk chocolate – 1 tablespoon soluble coffee powder


Prepare the ingredients. Soften 4 g of gelatin in sheets in cold water. If you use Agar Agar, follow the indications on the envelope. Combine the cocoa in a bowl with instant coffee, vanilla and 2 tablespoons of sugar, mix well to obtain a mixture. Put the ricotta cheese in a large bowl and work it with a wooden spoon.

Prepare the ricotta mixture. Beat the yolk in a saucepan, pour in the milk and cook for 6-8 minutes over medium heat, stirring with a whisk. Remove from the heat, squeeze the jelly, add it to the mixture (or add the agar agar) and dissolve it. Incorporate the hot mixture to the cocoa mixture, always mix with the whisk and let cool.

Mix the paste obtained from the ricotta cheese and work all gently to obtain a smooth and soft cream; cover with film the bowl and transfer in the refrigerator. Melt the remaining sugar in a saucepan with 3 tablespoons of water and cook over medium heat, until you get a syrup.

Complete the ricotta mousse with coffee. Whip until stiff the egg whites, add the syrup and continue to whip for a few minutes. Finally, gently mix the egg whites mixture with the ricotta cheese mixture, adding it to spoonfuls and a little at a time.

If you wish, you can divide the ricotta mousse with coffee into 4 dessert cups. Decorate, if you like, with chocolate chunks and serve.
