Fried squash blossoms are already very tasty, but the addition of anchovies will make this recipe truly unique!
If you want you can also try a variant in the preparation of anchovy pumpkin blossoms in which you will insert a little mozzarella inside them, to have a more delicate taste.
For those who do not particularly like mozzarella, can always prepare these delicious pumpkin flowers by joining the scamorza, which has a stronger taste, especially the smoked one. In this way it will also recall the particular taste of anchovies, to obtain a truly amazing dish.
FRIED ANCHOVY SQUASH BLOSSOMS
Ingredients for 4 people: 12 pumpkin blossoms – 4 yolks – 3 anchovies – 2 whole eggs – 1 lemon – 200 g canned tuna fish – 150 g flour – 1 tablespoon capers – 15 cl whole milk – 1/4 teaspoon baking soda – enough bread – oil to fry – parsley – salt and pepper
Let’s start with the batter to cook these delicious anchovy pumpkin flowers: mix the flour with eggs, milk, salt, pepper and grated lemon zest. Let it rest covered for at least an hour.
Remove the pistils from the squash blossoms. Soften the bread crumbs in the milk. Blend capers with anchovies, tuna, egg yolks, squeezed breadcrumbs, parsley, salt and pepper.
Stuff the squash blossoms with the mixture obtained, dip them in the batter to which you will have added baking soda and fry in plenty of oil.
