Then you should definitely try the herbal fillet salad, a light meat dish, easy to prepare and ready in just a few minutes.
FILLET SALAD WITH HERBS
Ingredients for 4 people: 250 g beef fillet – rucola salad – 80 g celery – 10 g dried mushrooms – 80 g radish – extra virgin olive oil – red vinegar – balsamic vinegar (optional) – salt and pepper
Cut the fillet into 2 long, narrow portions, about 2 fingers high.
Sauté in a frying pan with a drizzle of oil for 4 minutes;add salt and pepper and transfer to the oven already hot at 80° C for 15 minutes.
Finely cut the radishes, celery and porcini mushrooms. Crumble the dried mushrooms with your hands (check that they have no traces of soil or pebbles), then grind them finely in a small chopper.
Emulsify 1 tablespoon of balsamic vinegar (optional) in a bowl with 1 tablespoon of red wine vinegar (or apple vinegar), 6 tablespoons of oil, salt, and pepper.
Cut the meat into slices, add to the vegetables, season everything with the prepared vinaigrette, stir, finish with the powder of dried porcini mushrooms and serve.
