Artichokes are in season, so I propose another recipe with them as protagonists: the artichoke bottoms with goat cheese
An elegant dish, easy to prepare… but, above all, delicious!
ARTICHOKE BOTTOMS WITH GOAT CHEESE
Ingredients for 4 people: 6 carciofi – 1 limone – 4 cucchiai di olio extra vergine di oliva – 6 fette pane tostato – 1 cucchiaino timo – 1 cucchiano pepe rosa in grani – 6 caprini
Begin to prepare the artichoke bottoms with goat cheese by boiling the artichoke in abundant boiling water, slightly salted and acidulated with a few drops of lemon juice. When cooked, drain and let cool.
Emulsify in a bowl the extra virgin olive oil, crushed pepper grains, thyme and a pinch of salt.
Remove a thin layer of crust from the goat cheese that will place under the artichoke bottoms with cheese.
Place the artichoke bottoms on an oven tray lined with baking paper; place in each one a goat cheese and season with the freshly prepared aromatic emulsion.
Pass the artichoke and cheese bottom under the hot grill at 180° C. for a few minutes, until the goat will start to melt.
Serve the artichoke bottoms with goat cheese accompanied with a few toast slices.
