Saving at home – Salmon mousse


Hi everyone!

Are you looking for a quick and tasty seafood appetizer? Then, the salmon mousse is the recipe that will do for you.

The fresh taste of salmon and the creaminess of the Certosa cheese blend perfectly giving life to a salmon cream perfect to spread on croutons of black bread or canapés for your quick appetizers with friends.

Let’s start:


Ingredients for 4 people: 30 g smoked salmon – 125 g Certosa – 50 g lettuce – 10 g Lompo eggs – salt – black pepper – parsley


First, remove the smoked salmon and the Certosa from the refrigerator. Place the fish on the cutting board and cut out thin strips that you will need later to decorate the cups. Just cut 2 strips for each single cup. Chop the rest and pour into a bowl.
Take the parsley and wash it thoroughly under running water. Dry it with a cloth or kitchen paper. Then with the help of the crescent or a sharp knife, chop it finely and place it on a saucer.

Then add the Certosa, the salmon, chopped parsley and a pinch of salt and black pepper.  Mix all the ingredients evenly and let the mixture rest in the bowl. In the meantime, take the cups that you need to receive the mousse. Choose, if possible, white ceramic and square shape. They will add a touch of elegance to your table and dish.
Select 4 leaves of lettuce. Then wash them under running water and dry them with a cloth.  Place a lettuce leaf on the bottom of the cups.

Place the smoked salmon mousse inside a sac à poche with the help of a spatula and pour it in the middle of the leaf. Complete the decoration of the cup with the strips that you prepared previously and the caviar or lompo eggs. Finish the other cups with the same procedure and your appetizer is ready to be served.
