Saving at home – Pasta with pecorino cheese

Today we will see how to prepare this traditional farmer recipe prepared when the broad beans are in season.   

The pasta with pecorino cheese is a light first course, but tasty, enriched with a pinch of mint; This recipe is simply excellent!

Let’s start:

PASTA WITH PECORINO CHEESE

Ingredients for 4 people: 320 grams of semolina (durum wheat) – 50 grams of fresh pecorino – 300 grams of shelled broad beans – 1 white onion – 4 leaves Mint – extra virgin olive oil – salt

Preparation:

To make the pasta with pecorino cheese begin by peeling the onion, then cut into thin strips. Transfer them in a non-stick frying pan with 4 tablespoons of oil, wet them with a ladle of hot water, salt and cook them covered for 20 minutes.

Soak the large broad beans in boiling water for a few minutes, drain, cool and remove the skin that covers them. Add all the beans to the onion, pour another ladle of boiling water and continue cooking for 7-8 minutes on high heat.

Add the chopped mint leaves and salt

Cook the pasta, drain it al dente (Italian term indicating to drain it when it’s still a little bit crunchy, in other terms, not too cooked), transfer it in the pan with the broad beans, let it flavor for a few seconds, add the pecorino cheese cut into strips. 

Your pasta with pecorino cheese is ready to be served!
