The beef meatballs skewers with chickpea sauce are an easy and tasty second course, which everyone likes, young and old!
With the addition of salad, you can also serve it as a main course.

BEEF MEATBALL SKEWERS WITH CHICKPEA SAUCE
Ingredients for 4 people: 400 grams beef pulp – 125 grams skimmed yogurt – 150 grams canned chickpeas – 2 spring onions – 2 mint leaves – 1 bunch thyme – 1 bunch parsley – 1 clove garlic – 4 tablespoons extra virgin olive oil – tabasco
Prepare the sauce. Blend a clean spring onion (cut into wedges), with chickpeas and yogurt. Add a little olive oil, a pinch of salt, ground pepper and mint leaves and blend until smooth.
Finely chop the other onion together with parsley, thyme and garlic; put the chopped ingredients in a bowl with the minced meat, seasoned with a pinch of salt, a pinch of paprika and a little bit of tabasco; Mix the dough to make it as homogeneous as possible and, with damp hands, form many meatballs the size of an olive, sticking them gradually on 16 skewers.
Heat a cast iron plate, grease with a little oil and cook the meatball skewers turning them several times, so that they will cook evenly.
Serve your skewers very hot accompanied with chickpea sauce and, if you wish, with tomatoes and salad.
