Ahvo-lemono, as pronounced by the Greeks, is a velvety, rich, fragrant chicken soup, prepared in Greek style with Avgolemono sauce (lemon-egg sauce).
The best part of this recipe is that this version will be ready in just over 30 minutes.
Ingredients for 4 people: 600 ml of vegetable or chicken broth – 100 g rice – 2 eggs – the peel and juice of 1 lemon or 2 tablespoons of juice in the bottle plus the necessary to be added to the table – roast chicken, even leftovers of the day before (optional)
Boil the broth in a medium-sized saucepan, then add the rice and simmer for 15 minutes.
Break the eggs in a small bowl, grate the lemon zest, squeeze the juice and beat well. Add a few tablespoons of hot broth to the egg dough, beating quickly and carefully. Repeat. This step is very important – if you simply pour the beaten egg into the broth, you will find a pot of chicken broth with scrambled eggs floating, instead of a homogeneous mixture.
After beating and adding the broth to the eggs for two or three times, pour the mixture into the bowl with the rice, and stir well to mix.
Serve the soup with a little lemon juice.
TIP: If you have any leftover roast chicken, this is a way to use them. Add it cut into small pieces (even better in thin strips), before adding it to the eggs.
